When I titled this stuff, I think that most of you will think immediately about weight loss motivation for my choice. Not at all, because depending on my BMI index at 20.4 that is for normal body and there is no need to make effort to loose weight any more.
Simply, I would like to speak up that the color green is associated with life, vitality and renewal. I am particularly a person who love kitchen does so much and pay special attention to family health care links to daily diet.
While many people prefer choosing mostly red meat, canned foods resulted from modern living style, I still have many choice with variation of greens. The same goes with cooking green process, such as boiling, steaming or even grilling.
The main reason for my green choice may be come from how nutrient greens bring. As I knew green leafy vegetables are among the most nutrient dense foods available — high in calcium, iron, magnesium, potassium, phosphorous, zinc and vitamins A, C, E and K. Moreover, we can get benefits from them for health improvements, namely:
- Regular leagy greens consumption may boost immune function
- Vitamins rich in veggies known to prevent cancer and benefit health.
- Greens can drop the depression and provide steady energy.
- Eating raw may bring benefit of live enzymes needed for improved digestion and nutrient absorption.
I think that it is good idea to change our eating habit into non-meat diet more often and why not green leafy vegetables be the power players in our daily diet?
As I said, there is a variation of leafy green for your choice, but my prefer are:
Broccoli
Bok choy
Napa cabbage
Kale
Collards
Watercress
Mustard greens
Broccoli rabe
Dandelion greens
With these kinds, I can use steaming, boiling or sauteeing method. Even grilled or baked greens such as brussel sprouts that is not ablte to be forget every Christmas Days.
I also have to say that some of greens such as Spinach, Swiss chard and Beet greens are high in oxalic acid content. That is the reason why you should eat them in moderation. My tip is cooking them with tofu, beans, butter, nuts, or oil, the oxalic acid will balance out. Let’s imagine how great to enjoy a hot spicy pot of tofu, beans and some herbs in cold winter weather like this. In fact, I can eat them as many as I want, but that is a should not habit. Even though greens may help not to boost your weight, it still have to be eaten in moderation. One more thing, every day, I combine my diet with regular exercise schedule for the best health condition. Staying healthy or not depends on your attitude with your body. The more your love and do right, the healthier you are.
